This Instant Pot Ranch Beef Tips recipe makes a tasty, one-pot meal! The beef tips are nice and tender, and the veggies are flavorful.

How to make Instant Pot Ranch Beef Tips with Carrots and Potatoes

Step 1: Place beef cubes in the Instant Pot insert.

Step 2: Sprinkle half of the ranch seasoning mix over the beef cubes.

Step 3: Pour the beef broth around the roast.

Step 5: Add the potatoes and carrots on top.

Step 6: Sprinkle with the remaining half of the ranch seasoning mix.

Step 7: Close and lock the lid. Be sure that the pressure release valve is set to sealing. Press manual high pressure. Adjust the time to 25 minutes.

Step 8: Let the pressure release naturally for 15 minutes.

Step 9: Turn the pressure release valve to venting to release any remaining pressure.

Step 10: Remove the beef, potatoes, and carrots.

Step 11: To thicken the sauce, mix the cornstarch and water in a small bowl.

Step 12: Stir it into the cooking liquid. Press sauté, and cook until slightly thickened, stirring occasionally.

Ingredients

  • 3 pounds boneless beef chuck roast in 1-inch cubes or beef stew meat
  • 2-1 ounce packages ranch seasoning mix 6 tablespoons
  • 1 cup beef broth
  • 1 white onion sliced
  • 1 ½ pounds baby potatoes halved
  • 1 pound baby carrots
  • 2 tablespoons cornstarch
  • 2 tablespoons cool water

Instructions
 

  • Place beef cubes in the Instant Pot insert.
  • Sprinkle half of the ranch seasoning mix over the beef cubes.
  • Pour the beef broth around the roast.
  • Place the sliced onion around the roast.
  • Add the potatoes and carrots on top.
  • Sprinkle with the remaining half of the ranch seasoning mix.
  • Close and lock the lid. Be sure that the pressure release valve is set to sealing.
  • Press manual high pressure.
  • Adjust the time to 25 minutes.
  • Let the pressure release naturally for 15 minutes.
  • Turn the pressure release valve to venting to release any remaining pressure.
  • Remove the beef, potatoes, and carrots.
  • To thicken the sauce, mix the cornstarch and water in a small bowl.
  • Stir it into the cooking liquid.
  • Press sauté, and cook until slightly thickened, stirring occasionally.
  • Serve the sauce over the meat with the potatoes and carrots.

  • Beef chuck roast: A similar cut of beef will also work. 
  • Beef broth: I use reduced-sodium beef broth to help control the amount of salt in this recipe.

    Tried + True! I have made this twice now and it has turned out great both times. Meat is so tender and veggies are cooked just right.
    We LOVE ranch in this house, so after thickening up the sauce with cornstarch I also add straight ranch into the sauce (probably 3-4 tablespoons). Comes out tangy and tastes delicious!

    I made this for dinner tonight using my 6qt instapot duo and it came out so good all my kids got seconds! I added a bit more seasoning (salt, pepper, onion and garlic powder) with the ranch packets and it turned out amazing! So tender and the everything was perfectly cooked! Thank you

    1. Thank you! It’s there now. You may find that you need to adjust the amounts slightly depending on how thick you’d like the sauce to be. It will just be a 1:1 ratio of cornstarch and cool water.

    Can I make this in a slow cooker?

    1. Hi! I haven’t made this in a slow cooker, but I would guess so! When I make slow cooker dishes with vegetables and carrots, I add them in toward the end of the cooking time so that they don’t get overcooked.
