    Instant Pot Ranch Beef Tips with Carrots and Potatoes

    Instant Pot Ranch Beef Tips with Carrots and Potatoes recipe makes a complete, one-pot meal. This tasty recipe makes tender pieces of beef and tasty potatoes and carrots.

    This Instant Pot Ranch Beef Tips recipe makes a tasty, one-pot meal! The beef tips are nice and tender, and the veggies are flavorful.

    This meal is also pretty hands-off, and the main dish and sides all cook together. So the meal is as easy as it is delicious!

    How to make Instant Pot Ranch Beef Tips with Carrots and Potatoes

    Step 1: Place beef cubes in the Instant Pot insert.

    Ranch seasoning sprinkled on beef cubes.

    Step 2: Sprinkle half of the ranch seasoning mix over the beef cubes.

    Step 3: Pour the beef broth around the roast.

    Step 4: Place the sliced onion around the roast.

    Potatoes and carrots over beef tips.

    Step 5: Add the potatoes and carrots on top.

    Ranch seasoning sprinkled over baby carrots and potatoes.

    Step 6: Sprinkle with the remaining half of the ranch seasoning mix.

    Step 7: Close and lock the lid. Be sure that the pressure release valve is set to sealing. Press manual high pressure. Adjust the time to 25 minutes.

    Step 8: Let the pressure release naturally for 15 minutes.

    Step 9: Turn the pressure release valve to venting to release any remaining pressure.

    Step 10: Remove the beef, potatoes, and carrots.

    Step 11: To thicken the sauce, mix the cornstarch and water in a small bowl.

    Step 12: Stir it into the cooking liquid. Press sauté, and cook until slightly thickened, stirring occasionally.

    Can I use stew meat?

    Yes, you can use stew meat in this recipe.

    Do I have to cut the beef into cubes?

    Cutting the meat into cubes helps it to cook faster and more evenly. The roast won't cook in the given time unless it is cut into cubes.

    Storage

    Store any leftover beef tips, carrots, and potatoes in an airtight container in the refrigerator. The food will keep for up to 4 days when properly stored.

    • Instant Pot/Electric Pressure Cooker

    Ingredients

    • 3 pounds boneless beef chuck roast in 1-inch cubes or beef stew meat
    • 2-1 ounce packages ranch seasoning mix 6 tablespoons
    • 1 cup beef broth
    • 1 white onion sliced
    • 1 ½ pounds baby potatoes halved
    • 1 pound baby carrots

    Instructions

    • Place beef cubes in the Instant Pot insert.
    • Sprinkle half of the ranch seasoning mix over the beef cubes.
    • Pour the beef broth around the roast.
    • Place the sliced onion around the roast.
    • Add the potatoes and carrots on top.
    • Sprinkle with the remaining half of the ranch seasoning mix.
    • Close and lock the lid. Be sure that the pressure release valve is set to sealing.
    • Press manual high pressure.
    • Adjust the time to 25 minutes.

    • Beef chuck roast: A similar cut of beef will also work. 
    • Beef broth: I use reduced-sodium beef broth to help control the amount of salt in this recipe.

      Can I make this in a slow cooker?

        Hi! I haven't made this in a slow cooker, but I would guess so! When I make slow cooker dishes with vegetables and carrots, I add them in toward the end of the cooking time so that they don't get overcooked.
