Ingredients

pounds
boneless beef chuck roast
in 1-inch cubes or beef stew meat
2-1
ounce
packages ranch seasoning mix
6 tablespoons

cup
beef broth
1
white onion
sliced
1 ½
pounds
baby potatoes
halved
1
pound
baby carrots
2
tablespoons
cornstarch
2
tablespoons
cool water
Instructions
Place beef cubes in the Instant Pot insert.
Sprinkle half of the ranch seasoning mix over the beef cubes.
Pour the beef broth around the roast.
Place the sliced onion around the roast.
Add the potatoes and carrots on top.
Sprinkle with the remaining half of the ranch seasoning mix.
Close and lock the lid. Be sure that the pressure release valve is set to sealing.
Press manual high pressure.
Adjust the time to 25 minutes.
Let the pressure release naturally for 15 minutes.
Turn the pressure release valve to venting to release any remaining pressure.
Remove the beef, potatoes, and carrots.
To thicken the sauce, mix the cornstarch and water in a small bowl.
Stir it into the cooking liquid.
Press sauté, and cook until slightly thickened, stirring occasionally.
Serve the sauce over the meat with the potatoes and carrots.
Notes
Beef chuck roast:
A similar cut of beef will also work.
Beef broth:
I use reduced-sodium beef broth to help control the amount of salt in this recipe.
