How to make Instant Pot salsa verde beef

Step 1: Add the chuck roast cubes, onion, garlic, taco seasoning, broth, and salsa verde to the Instant Pot inner pot in the order listed.
Step 2: Press manual high pressure and adjust the cooking time to 25 minutes.
Step 3: When the cooking time ends, let the pressure release naturally for 15 minutes. Then carefully turn the pressure release valve to venting to release any remaining pressure.
Step 4: Unlock and open the lid.
Step 5: Stir in the corn meal.
Step 6: Press sauté, and cook until slightly thickened, stirring regularly, about 2-3 minutes.
Tips
- Chuck roast: It’s important to use a cut of beef like chuck roast that has a good amount of fat. The fat helps to keep the meat from drying out as it cooks.
- Cornmeal: The cornmeal helps to thicken the sauce. If you want thinner sauce, you can omit it.
- Spicy: The salsa verde beef can be hot or mild. For hotter beef, use hot taco seasoning and hot salsa verde. For milder beef, use medium or mild taco seasoning and salsa verde.
Serving suggestions
I like to serve salsa verde beef with flour tortillas and Instant Pot Mexican pinto beans on the side. I top it with queso fresco, sour cream, pico de gallo, fresh cilantro, and fresh sliced avocado or guacamole.

Place the beef cubes in a freezer-safe resealable container. Add onion, garlic, salsa verde, taco seasoning, and broth.
Seal and freeze for up to 3 months.
