How to make Instant Pot meatball soup

Step 1: Press sauté. When the Instant Pot reads “Hot”, add the oil.
Step 2: Add the onions and carrot, and sauté for 2-3 minutes, stirring regularly.
Step 3: Stir in the garlic, and cook for 30 seconds, stirring the entire time. Press cancel.
Step 4: Stir in the tomato paste, and cook for 30 seconds, stirring the entire time.
Step 5: Stir in 1 cup of stock, and scrape up any browned bits from the bottom of the pot.
Step 6: Add remaining broth, noodles, seasonings, and tomatoes. Do not stir.
Step 7: Place the frozen meatballs on top of the other ingredients, and gently press the meatballs down. Do not stir.
Step 8: Press manual high pressure and adjust the cooking time to 9 minutes.
Step 9: When the cooking time has finished, carefully release the pressure by turning the pressure release valve to venting.
Step 10: Give everything a good stir, and season with salt and pepper to taste.
Step 11: Serve soup topped with grated parmesan cheese.
Tips
- Meatballs: You can make homemade meatballs and freeze them, or you can use your favorite frozen meatballs in this recipe.
- Noodles: It's important to use whole wheat noodles because they have a longer cooking time and hold up better in this soup. Gluten free elbow macaroni has a similar cooking time and should also hold up well in this recipe.
- Serving: I like to serve the soup topped with a sprinkling of grated parmesan cheese. Fresh basil or fresh parsley also go well on top. This soup goes well with a loaf of crusty bread for dipping.
Storage
Store any leftover meatball soup in an airtight container in the refrigerator. The soup will keep for up to 4 days when properly stored.
However, the noodles will absorb some of the liquid as they sit, so you may need to add additional stock when reheating.
