Instant Pot hamburger soup is a great weeknight dinner option! This quick soup comes together with just a few minutes of prep, and the entire recipe is ready in about 30 minutes.
The soup is hearty – it has ground beef, veggies, and a rich, tomato broth. It’s also tasty! The soup gets lots of flavor from its simple ingredients.
How to make Instant Pot hamburger soup
Step 1: Press sauté.
Step 2: When it reads “Hot”, add the ground beef to the Instant Pot.
Step 3: Cook, stirring to break up the ground beef, until browned, about 4-5 minutes.
Step 4: Add the onion and celery, and cook, stirring regularly, until softened, about 2-3 minutes.
Step 5: Stir in the garlic, and cook, stirring the entire time, for about 30 seconds.
Press cancel.
Step 6: Stir in 1 cup of beef broth, and scrape up any browned bits from the bottom of the inner pot.
Step 7: Pour in crushed tomatoes, diced tomatoes with juice, diced potatoes, and remaining beef broth. Do not stir.
Step 8: Close and lock the lid, making sure the valve is set to “sealing”. Press manual high pressure and adjust the cooking time to 8 minutes.
Step 9: When the cooking time has finished, do a controlled quick release. Unlock and remove the lid.
Step 10: Stir in the Italian seasoning, and season with salt and pepper to taste.
Tips
- If you use lean ground beef, there shouldn’t be any need to drain it. If you don’t use lean ground beef, you may need to drain the grease.
- It’s important not to stir once the tomatoes are added. Tomatoes can cause a burn message if stirred in.
- I like to season after cooking because the seasoning can lose some of its potency during cooking.
- I serve the soup with an extra sprinkle of black pepper and a bit of fresh parsley on top.
- This soup goes well with crusty bread or herb breads.
Storage
Store any leftover soup in an airtight container in the refrigerator. The soup will keep for up to 4 days when properly stored in the fridge.

Best soup ever. I suggest hamburger in a pre-wrapped package is not used. I found ground beef packaged by the store is best.

Thank you! Absolutely! I have a note both above and below the recipe that says that if you don’t use lean ground beef (which is 93% lean where I’m at), you may need to drain the ground beef.

Just a question….
Using lean ground beef, shouldn’t one put a tsp of olive oil in the Instapot first?
Oil can help to keep the ground beef from sticking and can help promote browning. I haven’t found either sticking or browning to be an issue, so I don’t use oil, but you certainly can if you prefer.
