    Instant Pot Creamy Tortellini Soup

    Instant Pot creamy tortellini soup is packed with flavor! This easy soup recipe makes a tasty dinner with little prep necessary.

    Instant Pot creamy tortellini soup is so flavorful and so easy to make! This tasty soup is made with ground Italian sausage, plenty of garlic, and a touch of cream.

    The soup makes a great weeknight meal, and it takes little prep to make. This recipe is also easy to customize, so change it up to make it your own!

    How to make Instant Pot creamy tortellini soup

    Step 1: Press sauté.

    Ground italian sausage and onion in an Instant pot.

    Step 2: When the Instant Pot reads "hot", add the ground Italian sausage, onion, salt, and Italian seasoning. Cook, stirring regularly, for 5 minutes, or until the sausage is cooked through.

    Step 3: Add garlic and cook, stirring the entire time, for 30 seconds.

    Step 4: Press cancel.

    Step 5: Pour in 1 cup chicken broth.

    Step 6: Scrape up any browned bits from the bottom of the Instant Pot.

    Step 7: Add the remaining 5 cups chicken broth, diced tomatoes with juices, and tomato paste. Do not stir.

    Step 8: Close and lock the lid. Be sure the pressure release valve is set to the “sealing” position.
    Press manual high pressure and adjust the time to 5 minutes.

    Step 9: Let pressure naturally release for 5 minutes.

    Step 10: Carefully turn the pressure release valve to venting to release any remaining pressure.
    Remove the lid.

    Step 11: Press sauté. Stir in cheese tortellini, and cook tortellini for about 5 minutes, or until soft.

    Step 12: Add chopped spinach and heavy cream. Stirring until spinach wilts.

    Step 13: Adjust salt to taste. Serve topped with parmesan cheese and red pepper flakes, if desired, on top.

    Tips

    • Meat: Feel free to use a different type of ground meat in the soup, like ground beef or ground turkey. If you use ground turkey, add 1-2 tablespoons of olive oil before adding the meat and vegetables.
    • Chicken: Shredded rotisserie chicken could also be used.
    • Vegetarian: This soup could also be used made vegetarian. Omit the meat and use vegetable broth to make it vegetarian. 
    • Tomatoes: Italian diced tomatoes could also be used.
    • Tortellini: Feel free to use a different type of tortellini in this recipe.

    Serving suggestions

    Tortellini soup goes well with crusty breads like French bread or with herb focaccia bread. Or serve the soup with garlic bread or breadsticks.

    Storage

    Store any leftover tortellini soup in an airtight container in the refrigerator. The soup will keep for up to 4 days in the fridge.

    • Instant Pot/Electric Pressure Cooker

    Ingredients

    • 1 pound ground Italian sausage
    • 1 ½ cups diced yellow onion
    • 1 teaspoon kosher salt plus extra to taste
    • 1 teaspoon Italian seasoning
    • 6 garlic cloves minced
    • 6 cups reduced-sodium chicken broth divided
    • 14 ounce can petite diced tomatoes
    • 2 tablespoons tomato paste
    • 9 ounce package refrigerated cheese tortellini
    • 5 ounces baby spinach chopped
    • 1 cup heavy cream
    • Parmesan cheese
    • Red pepper flakes optional
