Step 1: Press sauté. When the Instant Pot reads “hot”, add the olive oil.
Step 2: Stir in the chicken, and cook until browned, about 2-3 minutes.
Step 3: Add the garlic, and cook for 30 seconds, stirring the entire time.
Step 4: Pour in ½ cup chicken broth, and scrape up any browned bits from the bottom of the pot.
Step 5: Add the remaining chicken broth and then the pasta.
Step 6: Sprinkle the Italian seasoning, paprika, and pepper over the top. Do not stir.
Step 7: Close and lock the lid. Press manual high pressure, and adjust the cooking time to 4 minutes. Be sure that the pressure release valve is set to sealing.
Step 8: When the cooking time has finished, carefully turn the pressure release valve to venting to release the pressure.
Step 9: Unlock the lid, and give everything a good stir.
Step 10: Stir in the parmesan cheese until melted.
Step 11: Add the cream and stir in.
Step 12: Stir in the spinach and chopped sundried tomatoes until combined.
Step 13: Serve sprinkled with a bit of basil.
Tips
- Burn notice: It’s important to scrape up the browned bits and to avoid stirring the pasta before cooking to avoid a burn notice. You can gently push the pasta into the broth but avoid stirring it.
- Chicken pieces: The chicken need to be cut into small pieces so that it can cook within the cooking time. If the pieces are too large, they wouldn’t cook properly within the short cooking time.
Serving suggestions
This pasta goes well with a fresh green salad and French bread or garlic bread on the side. You could also serve it with garlic knots or garlic breadsticks.
Storage
