About Kate

I’m Kate, and I love great food!

I got my first cookbook when I was five years old, and I’ve been cooking ever since. I come from a family of amazing cooks. Over the years, I’ve picked up so much from watching my mom and grandma cook, and I always loved to spend time in the kitchen with them.

I received my bachelor’s degree from Utah Valley University and my juris doctor from the University of Iowa. I also studied biotechnology and genomics law at Arizona State University, and I love to learn about the science behind why a recipe works.

I’m a long-time food blogger, and I’ve been sharing my easy recipes on I Heart Eating® since 2012. I love a good kitchen appliance, and I bought my first Instant Pot in 2016. I let it sit in the box for the first 6 months that I owned it because I had no idea how to use it. All of the buttons and settings can be intimidating (which is why I wrote my beginner’s guide to using the Instant Pot)!

One day, I decided that I was going to figure it out, and I’ve been hooked ever since! Now, I can’t imagine my dinner routine without my Instant Pot. I use it at least 3-4 days a week to make dinner, and Instant Pot recipes, like cheesy kielbasa pasta and chili, have become family favorites that I make over and over again.

I currently live in Utah with my husband and my five kids. My kids and my husband serve as my guinea pigs for my recipes, and every recipe I share on Eating in an Instant is one that my family has enjoyed.
