How to make Instant Pot Italian gnocchi soup

- Press sauté.
- Once the pot reads “hot”, add the ground Italian sausage.
- Cook, stirring to break it up, until partially browned.
- Stir in the onion, and cook for 3-4 minutes, or until beginning to soften.
- Add the garlic, and cook for 30 seconds, stirring the entire time. Press cancel.
- Pour in the chicken stock, and scrape up any browned bits from the bottom of the pot.
- Add the diced tomatoes, crushed tomatoes, tomato paste, Italian seasoning, and salt. Do not stir.
- Add the gnocchi, and gently press into the sauce, but do not stir.
- Close and lock the lid. Press manual high pressure and adjust the cooking time to 1 minute. Be sure that the pressure release valve is set to sealing.
- Once the cooking time has finished, carefully turn the pressure release valve to venting to release the pressure.
- Stir in the cream and the grated parmesan cheese.
- Add the spinach and the fresh basil and stir until spinach has wilted.
- Serve with additional grated parmesan cheese and fresh basil.
Serving suggestions
I like to serve this soup with breadsticks or crusty bread to sop up the soup. You could also serve it with garlic bread for even more flavor.
Storage
Store any leftover gnocchi soup in an airtight container in the refrigerator. The soup will keep for up to 4 days when properly stored in the fridge.

- 1/2 cup heavy cream
- 1/2 cup grated parmesan plus more for garnish
- 2 cups fresh spinach leaves
