Ingredient notes and substitutions
- Olive oil: Avocado oil also works well in this recipe.
- Cherry tomatoes: Feel free to substitute grape tomatoes.
- Broth: I like to use vegetable broth. However, you can use reduced-sodium chicken broth if you prefer.
- Penne pasta: Or a similar shape of pasta. If you use another type of pasta, you may need to adjust the cooking time accordingly.
- Seasoning: Feel free to adjust the seasonings according to taste.
How to make Instant Pot feta pasta
Step 1: Drizzle the olive oil in the Instant Pot inner pot.
Step 2: Add in a single layer of cherry tomatoes, and sprinkle with black pepper.
Step 3: Add the vegetable broth and then the pasta.
Step 4: Top the pasta with the chili flakes, Italian seasoning, garlic, remaining cherry tomatoes, and feta.
Step 5: Close and lock the lid. Press manual high pressure and adjust the cooking time to 4 minutes.
Step 6: When the cooking time has finished, quick release the pressure.
Step 7: Stir until the pasta is creamy and combined. The pasta sauce will thicken as it sits. Tip >> If the cheese doesn’t completely melt, you can set the lid back on the pot for a minute to help it melt.
Step 8: Serve topped with the finely chopped basil.
Serving suggestions
I recommend serving the pasta with a fresh green salad. We also like garlic bread or garlic breadsticks on the side.
Storage
Store any leftover pasta in an airtight container in the refrigerator. The pasta should keep for up to 4 days when properly stored in the fridge.
You may find that the pasta absorbs the sauce and it sits. If that happens, you can add a little bit of broth when you reheat it.
