Instant Pot chicken pesto pasta makes an easy weeknight dinner! This simple pasta dish takes just a few ingredients to make.
It’s also really easy to make! There’s almost no prep, and the entire dish takes less than 30 minutes total to prepare.
Ingredient notes
- Pasta: Another short pasta like penne pasta will also work.
- Chicken broth: I like to use reduced-sodium chicken broth. Regular chicken broth or chicken stock will also work.
- Chicken: Boneless skinless chicken breast or chicken tenderloins work well.
- Cherry tomatoes: Grape tomatoes will also work.
- Mozzarella: Mozzarella balls or fresh mozzarella cut into small cubes will also work.
How to make Instant Pot chicken pesto pasta
Step 1: Add the pasta to the inner pot.
Step 2: Pour the broth over the pasta.
Top tip >> The broth should just cover the pasta. You may find that you need to add a little extra broth to cover the noodles.
Step 3: Add the chicken to the top of the noodles in an even layer.
Step 4: Sprinkle the chicken with Italian seasoning.
Step 5: Close and lock the lid. Turn the pressure release valve to sealing and press the manual (pressure cook) button. Adjust the time to 5 minutes.
Step 6: Once cooking time is finished, do a controlled pressure release to quickly release the pressure.
Step 7: Stir in the pesto.
Step 8: Add the quartered tomatoes and mozzarella pearls.
Step 9: Sprinkle with grated parmesan cheese.
Tips
- The pasta can also be served cold like a pasta salad.
- The pasta should be covered by the broth. If it isn’t, you may need to add additional broth.
- If you add additional broth, you may end up with some extra broth in the pot after cooking. You can drain the broth before adding the pesto or just stir in the pesto for a saucier pasta.
Storage
Leftover pasta can be stored in an airtight container in the refrigerator for up to 3 days. You may find that you want to add additional pesto to the leftover pasta.
