Ingredients

extra virgin olive oil

cherry tomatoes
1/4
teaspoon
ground black pepper

vegetable or chicken broth

dried penne pasta
8
ounce
block feta cheese
Pinch
red chili flakes

tablespoon
Italian seasoning
3
cloves
garlic
minced

cup
basil
finely chopped
Instructions
Drizzle the olive oil in the Instant Pot inner pot.
Add in a single layer of cherry tomatoes, and sprinkle with black pepper.
Add the vegetable broth and then the pasta.
Top the pasta with the chili flakes, Italian seasoning, garlic, remaining cherry tomatoes, and feta.
Close and lock the lid.
Press manual high pressure and adjust the cooking time to 4 minutes.
Quick release the pressure when the cooking time has finished.
Stir until the pasta is creamy and combined. The pasta sauce will thicken as it sits.
Serve topped with the finely chopped basil.
Notes
Olive oil:
Avocado oil also works well in this recipe.
Cherry tomatoes:
Feel free to substitute grape tomatoes.
Broth:
I like to use vegetable broth. However, you can use reduced-sodium chicken broth if you prefer.
Penne pasta:
Or a similar shape of pasta. If you use another type of pasta, you may need to adjust the cooking time accordingly.
Seasoning:
Feel free to adjust the seasonings according to taste.
