Step 1: Place the beans in a large colander and rinse. You’ll also want to pick through the beans and remove any stones or debris.
Step 2: Pour the beans into the Instant Pot. inner pot.
Step 3: Add the water, onion, garlic, salt, chili powder, cumin, oregano, and a generous pinch or two of black pepper.
Step 4: Close and lock the lid. Press manual high pressure and adjust the cooking time to 25 minutes. It should take about 10-15 minutes to come to pressure.
Step 5: Once the cooking time has finished, let the Instant Pot to release pressure naturally. This will take 20-30 minutes.
Step 6: Unlock and remove the lid, and give everything a good stir. Season to taste with additional seasonings, salt, pepper, and lime juice.

Tips
- Seasonings: Please feel free to season to taste after cooking. Pressure cooking can dull seasoning, so please re-season after cooking for maximum flavor.
- Heat: For more heat, you can add a diced jalapeno or increase the amount of chili pepper in the recipe.
- Cooking times: Beans can vary in freshness, which can mean different cooking time lengths. If the beans aren’t cooked to your liking, set the lid back on and let them sit for 5-10 minutes.
