Step 1: Press sauté. Once the pots reads hot, add the butter and orzo. Cook for 2-3 minutes, stirring the entire time.
Step 2: Add garlic, and cook for 30 seconds, stirring the entire time.

Step 3: Add broth and stir in.
Step 4: Press cancel. Close and lock the lid. Press manual high pressure, and adjust the cooking time to 3 minutes.
Step 5: When the cooking time is done, do a quick pressure release. Unlock the lid and open the instant pot.
Step 6: Stir in the parmesan, feta, cherry tomatoes and spinach. If you want the cheese soft, let it sit for about 2 minutes.
Step 7: Season with salt and pepper to taste.
Step 8: Serve sprinkled with fresh parsley.

- 2 tablespoon butter or olive oil
- 1 ½ cups uncooked orzo
- 5 cloves garlic minced
- 2 ¾ cups vegetable broth
- 1 cup parmesan grated
- ¼ cup crumbled feta cheese
- ½ cup spinach leaves
- 1 cup cherry tomatoes halved
- Parsley
Instructions
- Press sauté.
- Once the pots reads hot, add the butter and orzo.2 tablespoon (28 g) butter, 1 ½ cups (225 g) uncooked orzo
- Cook for 2-3 minutes, stirring the entire time.
- Add garlic, and cook for 30 seconds, stirring the entire time.5 cloves garlic
- Add broth and stir in.2 ¾ cups (646 g) vegetable broth
- Press cancel. Close and lock the lid. Press manual high pressure, and adjust the cooking time to 3 minutes. Be sure that the pressure release valve is set to sealing. The pot should take about 10-15 minutes to come to pressure.
- When the cooking time is finished, carefully turn the pressure release valve to venting to do a quick pressure release. Unlock the lid and open lid.
- Stir in the parmesan, feta, cherry tomatoes and spinach. If you want the cheese soft, let it sit for about 2 minutes.1 cup (100 g) parmesan, ¼ cup (38 g) crumbled feta cheese, ½ cup (15 g) spinach leaves, 1 cup (149 g) cherry tomatoes
