Instant Pot three bean chili is a quick and easy chili that’s made from ground sausage and three different types of beans. This recipe takes just a few minutes of prep to put together, and the entire dish is made in the pressure cooker.

The chili can easily be customized to the ingredients you have and to your tastes. I’ve included tips for customizing the chili as well as serving ideas below.

Ingredient notes and substitutions

  • Italian sausage: You can use hot or mild depending on how spicy you’d like your chili to be. Also, you can use ground beef or turkey, but I recommend increasing the seasonings if you go with ground beef or turkey.
  • Beef broth: Use reduced sodium or no salt to better control the level of salt.
  • Beans: Feel free to mix and match your favorite combination of beans in this recipe.
  • Ro-Tel: Or a similar brand of tomatoes with diced green chiles.

How to make Instant Pot 3 Bean Chili

Here you’ll find step-by-step photos showing how to make this recipe. The full recipe, including ingredients, is given below.

Step 1: Press sauté.

Step 2: When the Instant Pot reads “hot”, add the ground sausage. If there’s more than about a tablespoon of grease, drain and return to the pot.

Step 3: Cook, stirring regularly to break it up, until no longer pink, about 4-5 minutes.

Step 4: Stir in the onions, and cook, stirring occasionally, until softened, about 3-4 minutes.

Step 5: Add the garlic and cook, stirring the entire time, for 30 seconds. Press cancel.

Step 6: Stir in the beef broth, and scrape up any browned bits from the bottom of the pot.

Step 7: Layer in the black beans, pinto beans, kidney beans, chili seasoning, diced tomatoes, Ro-Tel, and tomato paste. Do not stir.

Step 8: Close and lock the lid. Press manual high pressure and adjust the cooking time to 15 minutes. Be sure that the pressure release valve is set to sealing. It should take 10-15 minutes for the pot to come to pressure.

Step 9: Once the cooking time has finished, let the pressure release naturally for 10 minutes and then carefully turn the pressure release valve to venting to release any remaining pressure. Unlock and remove the lid.

Step 10: Give everything a good stir.

Tips

  • Do not stir: The reason that you don’t stir the chili before cooking once you’ve added the tomatoes is because the tomatoes will cause a burn warning.
  • Spice: This chili doesn’t have a lot of heat. If you’d like to add more, use hot Ro-Tel and hot and spicy taco seasoning.
  • Freezing: The cooked chili should be cooled to room temperature. Place the chili in a freezer-safe container. Freeze for up to 3 months.

Serving suggestions

I like to serve the chili with either sliced green onions or a bit of chopped cilantro. Sour cream and shredded cheese are also good toppings for the chili.

I serve cornbread or corn muffins or a side of cinnamon rolls.

Storage

Store any leftover chili in an airtight container in the refrigerator. It will keep for up to 4 days when properly stored in the fridge.

Ingredients

  • 2 pounds ground Italian sausage
  • 1 cup diced yellow onion about one medium onion
  • 2 cloves garlic minced
  • 1 cup beef broth
  • 2-14.5 ounce cans of white beans drained and rinsed
  • 2-14.5 ounce cans of pinto beans drained and rinsed
  • 15.5 ounce can of red kidney beans drained and rinsed
  • 2-1.25 ounce packets chili seasoning about 1/4 cup chili seasoning
  • 2-14.5 ounce cans diced tomatoes regular or fire-roasted
  • 10.5 ounce can Ro-Tel
  • 12 ounce tomato paste

Instructions
