Add garlic, and cook for 30 seconds, stirring the entire time.
5 cloves garlic
Add broth and stir in.
2 ¾ cups vegetable broth
Press cancel. Close and lock the lid. Press manual high pressure, and adjust the cooking time to 3 minutes. Be sure that the pressure release valve is set to sealing. The pot should take about 10-15 minutes to come to pressure.
When the cooking time is finished, carefully turn the pressure release valve to venting to do a quick pressure release. Unlock the lid and open lid.
Stir in the parmesan, feta, cherry tomatoes and spinach. If you want the cheese soft, let it sit for about 2 minutes.
1 cup parmesan, ¼ cup crumbled feta cheese, ½ cup spinach leaves, 1 cup cherry tomatoes
Season with salt and pepper to taste.
Serve sprinkled with fresh parsley.
Notes
Broth: You can use chicken broth if you aren't concerned with it being vegetarian.
Veggies: Feel free to mix in different veggies according to your tastes.
Cherry tomatoes: Grape tomatoes make a great substitute.
