Instant Pot creamy garlic clove chicken is a faster take on the classic dish chicken with 40 cloves of garlic. If it sounds like a lot of garlic, it is.
The garlic cooks down, and it becomes mellow and almost sweet. It adds fantastic flavor without overwhelming the dish.
How to make Instant Pot creamy garlic clove chicken
Step 1: Press sauté.
Step 2: Season the chicken breasts with salt and pepper. Set aside.
Step 3: Add the butter and olive oil to the inner pot.
Step 4: Add half of the chicken breasts to the inner pot and sear.
Step 5: Remove to a plate, and repeat with the remaining chicken. Remove to a plate.
Step 6: Add the garlic cloves to the inner pot, and cook, stirring regularly, until lightly browned, about 3-4 minutes.
Step 7: Deglaze the pot with wine, scraping up the browned bits.
Step 8: Add 1 cup of chicken broth.
Step 9: Return the chicken to the pot and season it with the thyme.
Step 10: Close and lock the lid. Make sure that the pressure release valve is turned to sealing. Press manual high pressure for 15 minutes.
Step 11: Let the pressure release naturally for 15 minutes and then release any remaining pressure. Press cancel.
Step 12: Carefully remove the chicken to a plate and tent with foil to keep warm.
Step 13: Stir the cornstarch and 2 tablespoons of chicken broth together in a small bowl.
Step 14: Add the cornstarch mixture to the pot and stir in to combine.
Step 15: Press sauté. Let the sauce thicken, stirring regularly.
Step 16: Press cancel. Stir in the cream.
Step 17: Serve the sauce over the chicken breast and season with additional salt and pepper to taste.
How to smash garlic cloves
To smash the garlic cloves, place a garlic clove on a cutting board. Place your knife flat over the clove and press down with the heel of your hand to smash the garlic clove.
Serving suggestions
The chicken and creamy garlic sauce are delicious served over mashed potatoes or rice to soak up the sauce. Since the sauce is rich, I like to serve the chicken with a green salad to lighten up the meal.
Storage
Store any leftover chicken in an airtight container in the refrigerator. The chicken will keep for up to 4 days when properly stored in the fridge.

Instructions
