package shelf-stable gnocchi

heavy cream

grated parmesan

fresh spinach leaves

chopped fresh basil
plus more for garnish
Instructions
Press sauté.
Once the pot reads “hot”, add the ground Italian sausage.
Cook, stirring to break it up, until partially browned. If your sausage is greasy, drain the grease and return it to the pot.
Stir in the onion, and cook for 3-4 minutes, or until beginning to soften.
Add the garlic, and cook for 30 seconds, stirring the entire time.
Press cancel.
Pour in the chicken stock, and scrape up any browned bits from the bottom of the pot.
Add the diced tomatoes, crushed tomatoes, tomato paste, Italian seasoning, and salt. Do not stir.
Add the gnocchi, and gently press into the sauce, but do not stir.
Close and lock the lid.
Press manual high pressure and adjust the cooking time to 1 minute. Be sure that the pressure release valve is set to sealing.
Once the cooking time has finished, carefully turn the pressure release valve to venting to release the pressure.
Stir in the cream and the grated parmesan cheese.
Add the spinach and the fresh basil and stir until spinach has wilted.
Serve with additional grated parmesan cheese and fresh basil.
Notes
Italian sausage:
You can use either mild Italian sausage or hot Italian sausage in this recipe.
Onion:
Either white or sweet yellow onion work well in this recipe.
Chicken stock:
You can use chicken broth in place of the stock.
Diced tomatoes:
Using diced Italian tomatoes will give you even more flavor.
