Ingredients

Instructions
Press sauté.
Once the pot reads "Hot", add the oil.
Working in batches, add beef stew meat and season with black pepper.
Cook until the outside has browned. Don't overcrowd the inner pot or it will steam, not brown.
Once the beef has browned, remove to a dish.
Press cancel.
Stir in 1 cup beef broth, scraping up any browned bits from the bottom of the pot. Return beef to the pot.
Cover, and cook on manual high pressure. Adjust the cooking time to 25 minutes. Be sure that the pressure release valve is set to sealing.
When the cooking time has finished, let the pressure release naturally for 20 minutes.
Release any remaining pressure, and unlock the lid.
Stir remaining ¼ cup broth and flour together in a small bowl.
Add to beef cooking liquid and stir in.
Press sauté.
Cook until thickened, stirring regularly.
Press cancel.
Stir in cream, sour cream, and mustard.
Season with salt and pepper to taste.
Serve topped with fresh parsley, if desired.
Notes
Beef broth
: I like to use reduced-sodium broth to control the salt level. Feel free to use regular broth (or stock) or no salt broth.
Heavy cream:
I don't recommend using half-and-half or milk. It will give you thinner sauce.
Sour cream:
I recommend using full-fat sour cream. Greek yogurt also works well. I don't recommend fat-free sour cream in this recipe.
