Ingredients

boneless pork shoulder or butt
cut into 1-inch chunks

reduced-sodium chicken broth

apple cider vinegar

liquid smoke

barbecue sauce
Instructions
Stir together the garlic powder, onion powder, kosher salt, ground black pepper, and smoked paprika in a small bowl. Set aside.
Add the pork chunks to the Instant Pot inner pot.
Pour the chicken broth, apple cider vinegar, and liquid smoke around the pork cubes.
Sprinkle the seasoning blend over the pork.
Close and lock the lid. Press manual high pressure and adjust the cooking time to 25 minutes.
When the cooking time has finished, let the pressure release naturally for 20 minutes.
Turn the pressure release valve to venting to release any remaining pressure and unlock the lid.
Drain off all but 1 cup of the cooking liquid.
Shred the pork, and stir in the barbecue sauce.
Notes
Garlic powder:
Be sure to use garlic powder, not salt.
Onion powder:
Make sure you use onion powder, not onion salt.
Kosher salt:
If using table salt, use half the amount of salt.
Pork shoulder:
A boneless pork butt also works.
