Add the chicken wings and water in the Instant Pot inner pot.
Season with salt.
Close and lock the lid.
Select Manual high pressure, and adjust the cooking time to 10 minutes.
Once the cooking time has finished, let the pressure release naturally for 10 minutes.
Fry or broil wings to crisp them up.
To broil the wings: Preheat the oven to broil.
In a large bowl, toss the wings in the sauce.
Place on a baking sheet and broil for about 5 minutes, or until crispy.
Flip the wings and repeat.
To fry the wings: Place the wings on a cooling rack on a baking sheet and refrigerate for 1 hour.
Heat the oil to 385°F in a large heavy pot.
Once at temperature, carefully add 7 or 8 wings into the oil and fry for 3 minutes, or until crispy. Don't overcrowd the pot.
Remove and place on a clean cooling rack or paper towel-lined plate.
Repeat with the remaining wings.
Toss the wings in the sauce and serve immediately.
Notes
Sauce: Feel free to choose any wing sauce that you like. There are a number of options available in the grocery stores that go beyond traditional buffalo wing sauce.
Oil: You can use a different type of oil for frying if you prefer.
