When the Instant Pot reads "hot", add the ground Italian sausage, onion, salt, and Italian seasoning.
Cook, stirring regularly, for 5 minutes, or until the sausage is cooked through.
Add garlic and cook, stirring the entire time, for 30 seconds.
Press cancel.
Pour in 1 cup chicken broth.
Scrape up any browned bits from the bottom of the Instant Pot.
Add the remaining 5 cups chicken broth, diced tomatoes with juices, and tomato paste. Do not stir.
Close and lock the lid. Be sure the pressure release valve is set to the “sealing” position.
Press manual high pressure and adjust the time to 5 minutes.
Let pressure naturally release for 5 minutes.
Carefully turn the pressure release valve to venting to release any remaining pressure.
Remove the lid.
Press sauté.
Stir in cheese tortellini, and cook tortellini for about 5 minutes, or until soft.
Add chopped spinach and heavy cream. Stirring until spinach wilts.
Adjust salt to taste.
Serve topped with parmesan cheese and red pepper flakes, if desired, on top.
Notes
Meat: Feel free to use a different type of ground meat in the soup, like ground beef or ground turkey. If you use ground turkey, add 1-2 tablespoons of olive oil before adding the meat and vegetables.
Chicken: Shredded rotisserie chicken could also be used.
Vegetarian: This soup could also be used made vegetarian. Omit the meat and use vegetable broth to make it vegetarian.
Tomatoes: Italian diced tomatoes could also be used.
Tortellini: Feel free to use a different type of tortellini in this recipe.
