Ingredients

boneless skinless chicken breasts
Salt and pepper

extra virgin olive oil

dry white wine

dried thyme leaves

Instructions
Press saute.
Season the chicken breasts with salt and pepper. Set aside.
Add the butter and olive oil to the inner pot.
Add half of the chicken breasts to the inner pot and sear.
Remove to a plate, and repeat with the remaining chicken.
Remove to a plate.
Add the garlic cloves to the inner pot, and cook, stirring regularly, until lightly browned, about 3-4 minutes.
Deglaze the pot with wine, scraping up the browned bits.
Add 1 cup of chicken broth.
Return the chicken to the pot and season it with the thyme.
Close and lock the lid. Make sure that the pressure release valve is turned to sealing.
Press manual high pressure for 15 minutes.
Let the pressure release naturally for 15 minutes and then release any remaining pressure.
Press cancel.
Carefully remove the chicken to a plate and tent with foil to keep warm.
Stir the cornstarch and 2 tablespoons of chicken broth together in a small bowl.
Add the cornstarch mixture to the pot and stir in to combine.
Press saute.
Let the sauce thicken, stirring regularly.
Press cancel.
Stir in the cream.
Serve the sauce over the chicken breast and season with additional salt and pepper to taste.
Notes
Wine:
You can substitute chicken broth for the wine if you prefer.
Garlic cloves:
There is a lot of garlic in this dish, but it becomes mellow as it cooks. Feel free to use less garlic if you prefer.
