Ingredients

lean ground beef

diced onion

diced celery

can crushed tomatoes

can diced tomatoes with juices

large Russet potatoes

tablespoon
Italian seasoning
Salt & pepper to taste
Instructions
Press sauté.
When it reads "Hot", add the ground beef to the Instant Pot.
Cook, stirring to break up the ground beef, until browned, about 4-5 minutes.
Add the onion and celery, and cook, stirring regularly, until softened, about 2-3 minutes.
Stir in the garlic, and cook, stirring the entire time, for about 30 seconds.
Press cancel.
Stir in 1 cup of beef broth, and scrape up any browned bits from the bottom of the inner pot.
Pour in crushed tomatoes, diced tomatoes with juice, diced potatoes, and remaining beef broth. Do not stir.
Close and lock the lid, making sure the valve is set to "sealing".
Press manual high pressure and adjust the cooking time to 8 minutes.
When the cooking time has finished, do a controlled quick release.
Unlock and remove the lid.
Stir in the Italian seasoning, and season with salt and pepper to taste.
Notes
If you use lean ground beef, there shouldn't be any need to drain it. If you don't use lean ground beef, you may need to drain the grease.
It's important not to stir once the tomatoes are added. Tomatoes can cause a burn message if stirred in.
